Raw honey carries a little of what it came from. That is the point of it.

Crystallizing is normal

Stand the jar in warm water and it comes straight back. Honey that never sets has usually been heated hard.

It changes

Every pull is different

Color and taste follow whatever was in flower. A summer jar and a fall jar are not the same jar.
